چکیده

The effects of some leguminous seed flour (LSF) on the viscoelastic properties wheat, maize and cassava flours were investigated. aim work was to evaluate effect LSF pasting characteristics flours. There significant differences in proximate composition used this study. Three namely Brachystegia eurycoma, Detarium microcarpum, Mucuna sloanei added differently at 0 2% dry weight bases, 0% addition served as control. determined using Rapid Visco Analyser (RVA). results showed that significantly affected increased (p>0.05) breakdown, final, trough peak viscosities wheat However, reduced peak, breakdown setback compared

Comparative study of the functional properties of lupin, green pea, fava bean, hemp, and buckwheat flours as affected by pH

The demand for products of high nutritional value from sustainable sources is growing rapidly in the global food market. In this study, the effect of pH on the functional properties of lupin, green pea, fava bean, hemp, and buckwheat flours was investigated and compared with wheat flour. Functional properties included solubility, emulsifying and foaming properties, gelling ability, and water ho...

Functional properties of waxy wheat flours: genotypic and environmental effects

A set of waxy (amylose-free) experimental spring wheats (Triticum aestivum L.) of diverse parentage were grown, along with two nonwaxy and two partial waxy check cultivars, at diverse North American cultural environments. Grain yield and functional attributes of derived flours were determined. Average grain yield of the waxy lines did not differ significantly from the average yield of the check...

Chemical composition, rheological properties and cookies making ability of composite flours from maize, sorghum and wheat

This study was performed to investigate the chemical and rheological properties of composite flours prepared by using whole wheat flour (Triticum aestivum), whole maize flour (Zea mays) and whole sorghum flour (Sorghum bicolor). Seven blends were prepared by homogenously mixing maize and sorghum flours with wheat flour in the percentage proportions: 0:100, 10:90, 20:80, 30:70, 15:15:70 (MF: WWF...

Properties of Flours and Starches as Affected by Rough Rice Drying Regime

Cereal Chem. 80(1):30–34 Flours and starches from rough rice dried using different treatment combinations of air temperature (T) and relative humidity (RH) were studied to better understand the effect of drying regime on rice functionality. Rough rice from cultivars Bengal and Cypress were dried to a moisture content of 12% by three drying regimes: low temperature (T 20°C, RH 50%), medium tempe...
